I wonder what is, aside of the glaringly obvious surface differences, the real discrepancy between risotto and paella.
The type of rice is different (carnaroli for risotto, and bomba for paella), but the real difference lies in the cooking process, risotto requires much more patience since you constantly need to add broth while mixing the rice until it is ready to be served, while in the paella, you just throw all of the stuff you got in the last drawer of your freezer on the pan, the rice will cook in a mix between tomato sauce and broth (once you put the broth in the pan you just leave it be until it is ready, no need to mix and shit)
Finally, a dialogue with depth and empirical data.
